Key Lime Tarts (Dairy & Gluten Free) with Exchanges




This yummy frozen treat comes from Nutritionist in the Kitch.  The coconut, avocado and walnuts are GREAT for lowering one's cholesterol.  This is the perfect healthy treat on a hot summer day!

Store in the fridge or freezer.
Serves: 12
Exchanges: 1 starch, 2 fat per tart
Ingredients
  • Crust:
  • 1 cup unsweetened coconut, shredded
  • 1 cup walnuts
  • ½ cup pitted dates (soaked in warm water for 30 minutes)
  • Filling:
  • 2½ firm avocados
  • ¼ cup fresh lime juice
  • 1 teaspoons lime zest
  • ¼ cup raw honey
  • 4 packets stevia (optional)
Instructions
  1. Grease a 12-muffin tin, set aside.
  2. Place the coconut and walnuts in a food processor. Blend until coarsely ground. Add the dates and process until the mixture begins to stick together. Press about 1½ tablespoons of the mixture into the bottom of each cup, about ¼ full.
  3. Process all filling ingredients in a food processor until smooth. Pour 1 heaping tablespoon of the filling into each muffin cup. Smooth the top.
  4. Garnish with a fresh slice of kiwi or a very thin slice of lime.
  5. Freeze for 30-60 minutes to set.
  6. Enjoy!

10 Healthy Kitchen Shortcuts





Having some tips that make kitchen time a little easier and faster can make all the difference when you are trying to get a meal on the table for your family.  So we have compiled some of our favorite healthy kitchen shortcuts that will help make you more efficient, and help you spend less time in the kitchen.

1. Slice a bunch of cherry tomatoes at once.  When you have to slice a lot of something little, it can be kind of tedious.  This method of cutting cherry tomatoes takes minimal time and effort and I bet you already have what you need in your kitchen.  Thanks The Kitchn for sharing this time saver!  


2. Freeze chicken stock.  Did you know that the standard muffin tin measures about 1/2 cup?  It's the perfect vessel to use to freeze liquid.  So next time you make some homemade chicken stock or have left over drippings from the Thanksgiving turkey pour that stock in a muffin tin and pop it in the freezer for future use! Thanks Martha Stewart for the kitchen time-saver!



3. Peel garlic fast and easy.  Peeling a ton of garlic for a recipe can be a tedious job.  So next time try this fast and easy trick from Real Simple.  All you need is 2 stainless steel bowls and a little muscle.  We even included a great video to show you how easy this is!



4. Soften butter quickly.  If your anything like me you'll be in the middle of a recipe and realize you forgot to take out the butter to soften.  Well next time try this handy tip from Lil Luna.  Simply cut your butter into small chucks and spread out on a plate.  It will soften in no time and you'll be right back to baking or cooking!



5. Use a melon baller to de-seed.  The handy melon baller isn't just for making pretty fruit salads.  It's a great tool to use to scrape seeds out of fruits and veggies.  It works great on peppers, cucumbers, strawberries, pears, zucchini and so much more!  Thanks Marin Mamma Cooks for sharing this great tip.


6. Use homemade mixes.  Making a large batch of homemade pancake mix can be a huge time saver in the mornings.  We love this recipe from Homemaker's Challenge.  Check out her addition of ground flax seed.  And don't be afraid to mix up the flours a bit and substitute with some or all whole wheat flour.  Homemade mixes are a great way to still put a hot breakfast on the table on busy mornings.



7. Freeze soft cheese for easier grating.  Sometimes grating a soft cheese like fresh mozzarella can leave you with nothing but frustration and small chucks of cheese!  Next time, place the soft cheese in the freezer for 20-30 minutes to harden and grating will be a breeze.




8. DIY Frozen Smoothie Packets.  Starting off the day with a healthy breakfast is so important.  Making frozen smoothie packets ahead of time is a great time saver...just pour, blend and drink!  We love these recipe combos from All Things Katie Marie.  



9. Cut and peel kiwi the easy way.  Did you know that a kiwi contains a large amount of vitamin C, even more than an orange! That's just one of the reasons we love them!  Here is a nifty tip from Steamy Kitchen on the easiest way to cut and eat your next kiwi.



10. The easiest way to freeze ground meat.  Here is a great healthy kitchen shortcut from Real Simple.  This works great for all ground meats: lean beef, turkey, chicken and pork.  Simply fill a zip lock back with ground meat, flatten and using a wooden skewer or chop stick section into a tic-tac-toe grid.  Then next time you need some ground meat break a piece off.  This method also helps meat thaw faster AND is a great way to proportion burgers for your next cookout!

The BEST Marinade EVER!



The summer season is in full swing and there is nothing better than a good versatile marinade for food on the grill.  Well we are happy to share THE BEST MARINADE EVER.  It's great for chicken, steak even pork or shrimp.  This is a flavorful marinade made from ingredients many people always have on hand and can be prepared in just minutes.  

INGREDIENTS:
3/4 cups vegetable oil
1/3 cup low sodium soy sauce
1/4 cup Worcestershire sauce
1/4 cup red wine vinegar
1/4 cup lemon juice
1 tablespoons dry mustard
1/2 teaspoon salt
1/2 tablespoon black pepper
1  teaspoons finely minced fresh
parsley
DIRECTIONS:
1.In a medium bowl, mix together oil, soy sauce, Worcestershire sauce, wine vinegar, and lemon juice. Stir in mustard powder, salt, pepper, and parsley. Use to marinate chicken before cooking as desired. The longer you marinate, the more flavor it will have.

10 Most Common Kettlebell Swing Mistakes and How To Fix Them



The kettlebell has certainly become a popular part of daily workouts for both men and women but how is your swing?  Dan John is a master StrongFirst kettlebell instructor says that the kettlebell swing is "easy to screw up".  So he put together a great list of the 10 most common kettlebell swing mistakes and the best ways to fix them.  

You squat.
This is the most common error I see. For some reason, guys want to "sit" when the bell goes between their knees. But the swing is not a squat, it's a hip hinge.

The difference? During a squat, your hips and knees maximally bend. During a hip hinge, your hips maximally bend and your knees minimally bend.

Hinging at your hips until your torso is almost parallel to the floor allows you to engage your hamstrings, large muscles that let you powerfully swing the kettlebell back up to top. Bending your knees won't let you do that.


Your lower back hurts.
After a swing workout, your hamstrings should be sore. But if you're lower back is bothering you instead, the problem is probably your hinge.

Some hinging pointers: Guide the kettlebell toward your groin as it falls. (I know that sounds scary, but trust me.) As it nears your zipper, bend at your hips and reach your arms back like you're deep snapping to a punter. This keeps your back in a neutral position and effectively engages your hamstrings.


You don't plank.
Think of the swing as two distinct movements: the hip hinge and the vertical plank. I've already cued how to hinge, but the plank at the top of your swing is equally important.

You want to be a straight line from your head to your feet. Pull your shoulders away from your ears, squeeze your glutes and quads, brace your abs, and push your feet through the floor. Pretend as if the top of your head is stretching straight to Zenith. It should look like you're performing a plank on the ground, but you're standing.

Your eyes wander.
When you look up or look down, you throw your form out of alignment. Keep your eyes on the horizon, and continue to look at that point throughout the entire move.


You lack control.
The kettlebell is heavy, so you need to generate a large amount of power to manage the weight. If you don't control it, it will control you—and that leads to injury.

Here's how to put some serious power behind your swing: After you hinge, forcefully explode your hips forward like you're performing a football tackle. Pretend as if you're throwing the weight in front of you. (Just think it. Don't actually release it!) As you hinge back, toss the weight toward your zipper. Do this every rep.

You get fancy.
Although single-arm swings are great for cardio and increasing grip strength, the uneven load can cause you to sway or twist. Unless you have a StrongFirst certified kettlebell instructor taking you through the basics of a single-arm swing, just stick with the standard two-handed version. It hasn't failed me yet.

Your arms go above your head.
At the top of your swing, the kettlebell should end somewhere between belt and shoulder height. You'll know it's high enough when you feel the bell "float" or go weightless for a second. The heavier the bell, the lower the peak of your swing.


You only concentrate on the swing.
The start and finish of the swing deserve just as much respect as the move itself.

The better your setup, the better your first swing will be, so don't just throw the bell back without first getting into the proper stance. Before every set, I make sure my feet are gripping the floor, my hips are hinged back, my back is flat, my lats are engaged, my hands are creating torque by trying to break the kettlebell handle, and my eyes are on the horizon.

When finishing, don't just dump the bell on the floor. Instead, guide it gracefully to the floor in front of you. This shows mastery and means you're in control of the weight the entire time.

TNT Asian Coleslaw Salad



Asian Coleslaw Salad
Makes 16 Servings (1/2 cup each)

If you don’t like regular cabbage, try Bok Choy or Napa Cabbage.  These are more like a lettuce instead of a cabbage.  Adding sesame seeds to this Asian dish is also a good addition and will add a different flavor and texture to it.

Crunchy Topping

- (1) pkg Ramen noodles (not the seasoning pack), broken into small pieces
- 3 oz. slivered almonds
- ½ cup sunflower seeds
- 2 Tbsp butter


Directions:
1)      Heat a skillet to medium heat and allow butter to melt.  While butter is melting, break up the ramen noodles and add to skillet along with remaining ingredients.
2)      Stirring frequently until the mixture is golden brown.  Cool and set aside.

Salad Mixture

- 1 bag of shredded cabbage
- 1 bag of shredded broccoli
- 1 cup fresh or frozen (thawed) Edamame
- 4 green onion, chopped


Directions:
1)      Mix all ingredients together in a large mixing bowl or salad bowl.


Dressing

- ½ cup rice wine vinegar
- 2 Tbsp low sodium soy sauce
 - 2/3 cup sugar
 - 2/3 cup extra virgin olive oil


Directions:
1)      Mix sugar and vinegar together.
2)      Combine soy sauce and oil together.
3)      Slowly add the oil mixture to the sugar mixture while continuously stirring to allow emulsification.
4)      Add to the salad and right before serving garnish with the crunchy toppings.


Exchanges: 2/3 starch; 3½ fats; ½ vegetable
